dinner

In my house it's the constant burning question of 'what's for dinner?'  It's forever on my mind.  I try to plan ahead and have a menu set so that I'm prepared to do my shopping and can plan ahead in other ways, making tortillas, having on hand sauce ingredients, etc.  But I am stuck in a rut.  I need ideas.  I know about 3 ways to cook beef, chicken and pork each and I've got to get some new things into the rotation.  

My boys eat just about anything.  So this is where I need your help.  As I've said before I have some limited resources to work with so I will end up adapting almost every recipe you send me, so don't be offended.  But I would love some of your easy family recipes.  Especially if you have a new and exciting way to cook rice and/or potatoes.  Rice especially.  We eat plain old white rice on a regular basis so if I'm making rice at home (cause in my opinion it goes better with some main dishes than something else) I would love a way to spice it up.  And for that matter are there any starchy sides out there that I'm missing?  Rice, potatoes and pasta are just about all there is in my house.

So this is a challenge.  I need EVERYONE that reads, lurkers included, to post a comment with a dish idea.  If your recipe is long email it to me.  Also, if it's good I don't mind it being slightly complicated.  Just think, if you all post something then we could all benefit.  I may even get inspired and post one of my own tried and true (yet boring) recipes.

We all dig this chicken wrap recipe

1 c diet cola
1 c ketchup
1/4 c Worcestershire
3 Tbls steak sauce
1 tsp dried onion
1 tsp garlic powder
1 1/2 lb boneless, skinless chicken
tortillas
mixed greens

Mix first 6 ing in pot, bring to boil over medium heat, reduce heat & simmer 6-8 minutes. Cook chicken and then shred. Wrap in tortillas with greens.

And this pasta is a hit

Angel Hair w/ Eggplant Tomato Sauce
1 small eggplant, cut into 1/2 inch slices
1 red bell pepper, cut into 8 strips
3/4 tsp salt
1/2 lb angel hair
1 garlic clove, minced
2 large tomatoes, chopped
1/2 cup chicken broth
2 tbsp basil
2 tbsp chives
1 c reduced fat feta

Grill eggplant & pepper (I do this on my Foreman...I'm sure it would be fine to broil instead). Cook pasta. Saute garlic until fragrent. Add tomatoes & cook until tender. Stir in eggplant & peppers, broth, basil, chives. Bring to boil. Cook til thickened. Add pasta & cheese, toll to coat.

Black Bean Soup

1 onion, diced
4 garlic cloves, minced
3 cans black beans, undrained
1 tsp cumin
1 can veggie broth
1 can diced tomatoes with green chilis
1 can sweet corn, drained

Cook onion and garlic about 5 min. Place onion, garlic, 1 can of the beans, cumin in blender and pulse until smooth. Add this to pan with other can of beans, broth, tomoatoes and corn. Bring to boil. Reduce heat & simmer, uncovered, 20-25 minutes.

Honey Roasted Red Potatoes

1 lb red potatoes, quartered
2 tbsp diced onion
2 tbsp butter, melted
1 tbsp honey
1 tsp dry mustard
1 pinch salt
1 pinch ground black
Preheat oven to 375. Coat baking dish with cooking spray. Place potatoes in single layer & top with onions.In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.
Bake in the preheated 375 degrees F (190 degrees C) oven for 35 minutes or until tender, stirring halfway through the cooking time.

Mushroom Rice
1 cup uncooked long-grain rice
1 (10.5 ounce) can condensed French onion soup
1 (10.5 ounce) can beef broth
1 (4 ounce) can sliced mushrooms, drained
1/4 cup butter

Preheat oven to 350 degrees F (175 degrees C).
Combine rice, onion soup, beef broth, mushrooms and butter in an 8x8 inch casserole dish.
Cover, and bake in the preheated oven for 60 minutes

I get my recipes from Pampered Chef, since I am a consultant, I will email you the chicken and beef recipes that makes around 5 meals each.
